Madonna was in London this week (March 4th, 2026) shooting a high-energy music video for the first single from her long-awaited project Confessions on a Dancefloor Part 2, marking another step toward the release of her 2026 studio album.

The scene was staged inside a packed “club” at Black Island Studios with about 250 models and dancers on hand, setting the tone for what insiders describe as a return to the unrestrained dance aesthetic that defined much of her earlier work. The production was handled by Voodoo with James Waters producing, and cast members reportedly agreed to a strict nondisclosure agreement because of the intimate nature of what was being filmed. She has enlisted director Torso, the mastermind behind Charli xcx‘s video for Von Dutch, and she has brought on board her choreographer Damien Jalet.

This upcoming LP is shaping up to be one of Madonna’s most talked about releases in years, as it will be her first full album since Madame X in 2019 and a direct continuation of the iconic 2005 Confessions on a Dance Floor. That original record not only topped charts around the world and produced global hits like Hung Up and Sorry, it also won a Grammy Award for Best Electronic/Dance Album, cementing her status as a consummate pop innovator.

For Part 2, Madonna has reunited with producer Stuart Price, the creative force behind much of the original album. Their collaboration is expected to bring a fresh yet familiar sound, infusing contemporary dance-pop with elements of disco and electronic rhythms that helped define her earlier work. Fans have responded with excitement to teasers and social media hints that she is reconnecting with the spirit of the original while pushing into new sonic territory.

Madonna’s return to Warner Records is another notable part of this era. Her new contract with the label, which was home to many of her early hits, signals a full-circle moment in her career. Warner executives have publicly celebrated her return, calling her an unmatched visionary whose contributions have shaped decades of pop music.

Details about the album’s title and track listing remain under wraps, though social media posts by Madonna reference studio sessions and her enthusiastic embrace of dance music. The lead single’s shoot in London, with its elaborate choreography and club atmosphere, suggests a bold visual statement will accompany the music release later this year.

With Confessions on a Dancefloor Part 2 slated for release in 2026 and production ramping up, this chapter in Madonna’s career looks to recapture the kinetic joy of her dance-floor roots while giving fans new reasons to celebrate her enduring artistry.

For decades, SXSW has branded itself as a cultural tastemaker, a launchpad for rising talent, and a progressive hub where music, film, and technology collide. Yet beneath the glossy marketing and industry hype, critics argue the festival reflects a more troubling reality about corporate influence, artist exploitation, and inconsistent treatment of creatives.

A significant source of controversy has been corporate and government sponsorship. Over the years, SXSW has partnered with powerful technology firms, defense contractors, and branches of the military. While sponsorship is common in large events, detractors question whether aligning with institutions linked to global conflicts and controversial policies contradicts the creative, community-driven spirit the festival promotes. Artists and attendees have staged protests in response to certain sponsors, arguing cultural platforms should not normalize or indirectly legitimize industries connected to warfare or surveillance. Whether one agrees with that stance, the tension highlights how deeply commercial interests shape the festival’s ecosystem.

SXSW held an edition in London that programmed speakers representing deeply complicit companies like Palantir, and targets of the Palestinian-led Boycott, Divestment, and Sanctions (BDS) movement like Barclays. Palantir provides military technology enabling Israel’s genocide in Gaza and Barclays finances weapons manufacturers arming the genocide. Last year, massive artist and fan boycotts forced Barclays to end its sponsorship of Live Nation’s British music festivals.

While both these speakers were dropped after pressure from artists and campaigners, SXSW London then added Tony Blair as speaker at short notice. Blair is credibly accused of war crimes and possible crimes against humanity by human rights experts, political parties and leaders in the UK and elsewhere for his role in the illegal US-led war on Iraq and genocidal sanctions that together killed hundreds of thousands of Iraqis.

Another persistent criticism centres on the pay-to-play structure many emerging musicians experience. SXSW London has been exposed for asking artists to pay for the chance to be selected to play, whilst the financial burden of participation also falls squarely on performers. Bands must cover travel, lodging, equipment transport, visas, and promotional expenses. Official showcases are frequently tied to labels, PR firms, or third party promoters who charge substantial fees for representation. For independent artists chasing exposure the total cost can reach thousands of pounds with no guarantee of career advancement.

Supporters argue SXSW offers unparalleled networking opportunities and potential discovery. Breakout success stories do exist. Critics counter that these cases are exceptions rather than the norm and that the festival profits from the aspirations of countless hopeful musicians who receive little tangible return. Exposure does not pay rent or recoup touring losses.

Many UK and international artists reported rejection from the lineup without clear reasons, leaving creatives confused and frustrated. In some cases artists with solid touring histories and strong followings received no explanation Observers say the opaque selection process feeds the perception that decisions are not based on merit, but on connections, pre existing industry ties, or commercial objectives.

These issues may be structural rather than conspiratorial. SXSW operates within a commercial framework that prioritizes sponsors, industry insiders, and media buzz. In that environment, artists can become content providers rather than equal stakeholders. When cultural capital is monetized at scale the line between opportunity and exploitation grows thin.

Calling the festival purely malicious oversimplifies a complex institution. Still the criticisms raise legitimate questions about who truly benefits from major cultural events. As artists and audiences become more conscious of ethical alignment and economic fairness, pressure will likely continue mounting on SXSW and similar festivals to reconcile profit motives with the values they claim to champion.

This August, The Great Vegan Gathering comes to Gilwell Park with a joyful celebration of plant-based culture, sustainability and creative expression. Designed as an inclusive, community-driven event, the gathering brings together food lovers, activists, families and artists for full days of connection, learning and live music. Among the standout performers announced is NEO 10Y, an artist whose presence feels especially aligned with the spirit and values of the event.

Taking place from Fri 28 Aug 2026 – Mon 31 Aug 2026, The Great Vegan Gathering offers far more than a music programme. Visitors can explore over one hundred vegan food and lifestyle stalls, enjoy live cooking demonstrations from leading chefs, attend talks and workshops on ethical living and animal rights, and take part in yoga, wellness and family-friendly activities. The festival is built around accessibility, positivity and compassion, welcoming everyone from long-time vegans to those simply curious about plant-based living.

The live music lineup reflects that same sense of diversity and openness. Beloved UK swing outfit The Jive Aces will bring their infectious energy and feel-good sound, while other artists add colour and rhythm throughout the day including Stella Paris, Vegan Queen V, Sweet Goose, The Rabbits, The Vegan Vampires, BFriendly, Tanglemist, Emaline Delapaix, and The 3 Daft Monkeys.

NEO 10Y is widely regarded as one of the most compelling and distinctive voices to emerge from London’s alternative music scene in recent years. Known for blending cinematic grunge, industrial textures and emotionally charged storytelling, his work resists easy categorisation. Beyond the sound itself, NEO 10Y has built a reputation for creating immersive live experiences that feel more like shared rituals than traditional concerts, inviting audiences into moments of reflection, release and collective presence.

He has performed at venues and festivals around the world, including the Roundhouse, Troxy, Vegan Camp Out, Secret Garden Party, West Hollywood Pride, Rough Trade Records, and showcases at New York and London Fashion Weeks, alongside intimate performances at animal sanctuaries. NEO 10Y has also hosted National Animal Rights Day (NARD) and other vegan advocacy events, using his music and live shows to promote higher consciousness and action for a more compassionate world.

These values naturally resonate with The Great Vegan Gathering, making his participation feel less like a booking and more like a meaningful meeting of purpose and art. For many attendees, NEO 10Y’s performance will be a moment of emotional depth within a day filled with flavour, movement and inspiration. It is a reminder that vegan culture is not only about what we eat, but also about how we connect, express ourselves and imagine a kinder future together.

As The Great Vegan Gathering prepares for its debut edition, the inclusion of artists like NEO 10Y signals a festival that values creativity, authenticity and shared values over traditional structures. This summer gathering is shaping up to be a space where music, ethics and community truly meet.

Gauthier Soho is undeniably one of London’s most exciting culinary destinations, offering a progressive, plant-forward dining experience that delights both the palate and the conscience. The flavours are inventive, the textures sublime, and the vegan philosophy is woven seamlessly into each dish, proving that plant-based cuisine can rival, and surpass, traditional fine dining. It’s easy to see why food lovers leave here thinking, “This deserves a Michelin star.”

Yet, despite its gastronomic brilliance, Gauthier Soho has yet to receive Michelin recognition. There are a few details that might explain why. First, the physical environment presents some hazards. The staircase leading to the main dining area is dangerously narrow and shows signs of wear, a safety concern that might raise eyebrows in a Michelin inspection.

Then there are some quirky choices in presentation and service. Drinks are served with paper straws rather than metal or glass alternatives, and the much-anticipated Virgin Mary arrived lacking celery – a small detail, but one that shows attention to the classics matters, even in a forward-thinking kitchen. Service, too, can feel tense; the staff seem to operate in a frequency of near-constant anxiety, which, while earnest, can make the dining experience slightly uncomfortable.

Portion size is another sticking point. The dishes are exquisitely crafted, but they are often so small that even dedicated vegans seeking to meet their protein and caloric needs might leave still hungry. Michelin may consider this a minor issue, but for a cuisine that prides itself on nourishing the body as well as the senses, it matters, especially at that price.

All that said, the food itself is extraordinary. Every dish at Gauthier Soho is a masterclass in vegan gastronomy, showcasing creativity, bold flavors, and an unapologetic respect for ingredients. This is a restaurant that pushes boundaries while maintaining the finesse expected of high-end dining.

In contrast, the chef’s other plant-based institution, 123 Vegan at Brown’s Fashion, takes a very different approach: generous, “eat-as-much-as-you-can” sushi plates and a relaxed, welcoming atmosphere. While it may not have the haute dining polish of Gauthier Soho, it nails accessibility, comfort, and abundance – qualities that Michelin values in different ways.

Ultimately, Gauthier Soho may still be on the path to Michelin glory. If the team addresses a few practical details – stair safety, portion sizes, a bit more polish in service – it’s entirely possible that this forward-thinking, flavour-packed vegan haven could finally get the recognition it deserves. For now, diners can savor an extraordinary meal that challenges expectations, even if it hasn’t yet earned the little red star.

What was once known as a haven for liberation and equality, Torture Garden Club in London has come under fire for oppressive behaviour, unprofessional door staff and toxic circumstances for guests.

In a space which was long praised for being London’s temple of sexual freedom and self-expression, something has cracked. For years, queer people have turned to nights like Torture Garden for release – a place where gender, kink and identity could coexist without judgement. But reports of what has happened recently – particularly the post Halloween weekend of 2025 – proved that even within the latex-wrapped walls of the city’s most famous fetish club, safety is not guaranteed.

We have learned that queer guests – trans, non-binary, and gender-diverse people – were singled out by staff and subjected to disparaging comments, and treatment that felt humiliating and targeted. Instead of protection, there was policing. Instead of celebration, control and abuse.

It’s hard to overstate how devastating that feels in a place built on the idea of freedom. Torture Garden has always branded itself as inclusive, but when Torture Garden Club staff use their power to make queer people feel unwelcome, the message becomes clear: inclusion only goes so far.

This isn’t just about one night or one venue. Across London, queer safe spaces are shrinking – victims of gentrification, politics, and a cultural backlash that dresses itself as “neutrality.” The pendulum has swung so far right that even the bastions of kink and liberation are being infected with fear and conformity.

No space that excludes, humiliates or dismisses queer people can claim to be progressive. What happened in November 2025 isn’t just a moment of bad behaviour, it’s a warning. Safe spaces don’t stay safe on their own; they need constant accountability and community care.

To those who were hurt tonight: you are not overreacting. Your anger and your exhaustion are valid. And to the clubs and organisers who claim to celebrate diversity: start proving it, not just promoting it.

London’s vegan scene has exploded beyond bland buffets and limp lettuce plates. These days, plant-based dining can be indulgent, elegant, and endless. Whether you want bottomless sushi in Mayfair or soulful sharing plates in Earlsfield, the capital’s vegan “all you can eat” offerings deliver on both flavour and feel-good energy. Here’s where to go when you want everything—literally.

123V (Browns, Mayfair)
When Michelin-starred chef Alexis Gauthier turns his hand to vegan sushi, you know it’s going to be special. 123V’s “Bottomless Vegan Sushi” is London’s most stylish unlimited dining experience – a two-hour session of edible art that never seems to end. Expect maki, nigiri, and crispy rice creations topped with plant-based tuna and salmon so convincing you’ll do a double-take. Everything here is meticulously plated, from the delicate rolls to the glossy cocktails, and the leafy courtyard terrace makes it feel like you’ve escaped to an urban oasis. This isn’t a buffet; it’s a masterclass in cruelty-free luxury.

Amrutha (Earlsfield & Honor Oak)
Amrutha has quietly built a cult following for its soulful, share-and-refill dining model. The concept is simple: order the set menu, eat as much as you like, and let the kitchen keep the good stuff coming. Plates arrive vibrant and fragrant—Thai green curry, beetroot gazpacho, lentil dahl, satay pakoras – and the team’s warmth matches the food’s heart. It’s BYOB, unfussy, and packed with locals who treat it like a second home. Every visit feels like being fed by friends who just happen to be incredible cooks. If vegan dining could hug you, it would taste like Amrutha.

Su Vegan Buffet (Shepherd’s Bush)
For a true “load your plate to the brim” experience, Su Vegan Buffet is the spot. For under a tenner, you can pile up endless combinations of mock-duck stir-fry, black-bean seitan, tofu curry, and fresh salads. The food is comforting, hearty, and exactly what you want on a grey London afternoon. It’s budget-friendly, unfussy, and genuinely all-you-can-eat – a reminder that vegan doesn’t have to mean expensive or exclusive.

Calling London the “vegan capital of the world” isn’t just a line in a travel guide; it’s a social-psychological phenomenon. For several years running London has topped global lists of vegan-friendly cities – a status measured not only by restaurants but by how plant-based life has saturated everyday cultural meaning in the city.

What looks like a gastronomic trend has, in fact, been propelled by a set of psychological dynamics working together: social proof and signaling, identity fusion, moral attention cycles, and catalytic personalities who translate ethical concern into habit and culture. Below I unpack those forces – and the role a few high-profile London-based activists have played in turning options into convictions.

1. Social proof and ubiquity: the city as a feedback loop

Psychologists call it social proof: when a behavior is visible and common, others are more likely to try it. London’s dense restaurant scene – and its rapid growth in vegan venues – creates constant, low-cost exposure to plant-based food. When every neighbourhood café can deliver an oat latte, a meat-free sandwich and a vegan pastry, abstaining from animal products stops being an “ask” and starts to feel normal.

This matters because behaviour change is easier through small steps: if the environment supplies tasty, convenient alternatives, the cognitive load of switching drops. Habit formation follows environment more quickly than it follows ideology.

2. Identity and signaling: veganism as urban cultural capital

In dense urban ecologies, food choices are social signals. Eating vegan can signal cosmopolitanism, ethical concern, environmental awareness, or belonging to a progressive in-group. In London, veganism has been absorbed into fashion, nightlife, celebrity culture and wellness – meaning the choice signals many desirable identities at once. That multiplies adoption: people don’t just eat differently; they reframe who they are.

3. Moral salience and affect: why outrage and compassion both work

Two psychological levers are key for moral change: cognitive argument (the “facts”) and affective salience (emotional impact). Activists in London have used both. Shock tactics and undercover footage make the ethical issue emotionally immediate; calm, reasoned debate frames the change as rational and doable. Both routes reduce psychological distance from animal suffering — one by making it vivid, the other by building defensible justifications for change.

That emotional-cognitive double-hit accelerates moral conversion because it reduces the mental gymnastics (rationalizations, normalization) people otherwise use to keep eating animal products.

4. Catalysts: how public personalities accelerate diffusion

Movements need charismatic or visible nodes to synchronize individual choices into a social wave. In London’s vegan story, a handful of well-known activists have functioned as those nodes — not because they invented veganism, but because they translated its moral vocabulary into channels people actually pay attention to.

Earthling Ed (Ed Winters) — a preacher of reason: Ed combines debate training, public speaking and media savvy to make vegan arguments accessible and defensible. His calm, rational approach reduces cognitive dissonance for those who want moral clarity before changing habits.

Joey Carbstrong — the provocateur: Joey’s confrontational street interviews, undercover exposes and emotionally charged messaging create moral shock and urgency. That kind of activism makes the issue salient in the public eye and drives conversations that traditional advocacy often cannot.

NEO 10Y (Nik Thakkar) — the cultural integrator: NEO 10Y brings veganism into art, fashion and queer cultural spaces. By embedding plant-based ideas in aesthetics, performance and identity art, they help veganism feel less like a diet and more like a creative, ethical lifestyle.

These figures illustrate different psychological levers: reason, emotion, and identity. Together they form a potent vector – hitting diverse audiences across universities, clubs, online platforms, and street corners.

5. Institutions and market feedback: when supermarkets and chefs respond

Activism and cultural signaling create demand; business and institutions supply it. London’s food scene is responsive: more plant-based product launches, vegan grocery options, and even Michelin recognition for plant-based cuisine. That institutional approval further validates the choice and closes the loop: as high-end chefs and mainstream retailers embrace plant-based options, veganism moves from niche ethics to culinary status.

The bottom line: psychology explains permanence

Being “the vegan capital” isn’t a trophy that arrived by chance. It’s the emergent outcome of social proof, identity signaling, emotional salience, catalytic personalities and market adaptation. London offers the environmental scaffolding (restaurants, festivals, influencers, retailers) and the psychological scaffolding (celebrities, activists, cultural pathways) that turn occasional moral curiosity into durable lifestyle change.

If you think of social change as a contagion, London currently provides the perfect vectors: visible choices (restaurants), persuasive nodes (activists like Earthling Ed, Joey Carbstrong and NEO 10Y), and everyday reinforcements (cafés, supermarkets, cultural institutions). That combination explains how a cluster of individual actions became a citywide identity – and why the title “vegan capital” has stuck.

More than a decade after it shimmered onto our screens, Burlesque is ready to take center stage again – this time under the dazzling lights of London’s West End. And who better to lead the charge than the woman who made the original film unforgettable? Pop icon, vocal powerhouse, and all-around legend Christina Aguilera is stepping into the role of producer for the stage adaptation of Burlesque, marking her official West End debut in a creative capacity.

Burlesque The Musical is now playing at the West End’s Savoy Theatre until 6 September 2025. Fans and theatre insiders alike are already buzzing with excitement as Aguilera breathes new life into the sultry, glitter-soaked world she helped create.

An Icon Reclaims Her Crown

When Burlesque premiered in 2010, it was a glorious collision of old Hollywood glamour and modern pop. Christina Aguilera starred as Ali, a small-town girl with a voice that could shatter chandeliers and a dream that wouldn’t quit. Alongside the legendary Cher, Aguilera dazzled audiences with powerhouse vocals, dynamic choreography, and a storyline that fused heart, grit, and sparkle.

Though the film received mixed critical reviews, it has since evolved into a cult classic, celebrated for its unabashed glamour and empowerment themes. Songs like “Express,” “Show Me How You Burlesque,” and “Bound to You” became anthems – and Aguilera’s performance became a defining moment in her career.

Now, with Burlesque’s transformation into a full-scale musical, Aguilera’s influence goes far beyond the spotlight. As lead producer and co-creator, she’s crafting a bold new vision of the story she helped make iconic. “Burlesque has always been about taking control of your power and identity,” Aguilera confesses. “Bringing it to the stage in this way feels like coming full circle.”

The Team Behind the Velvet Curtain

The West End production of Burlesque features an all-star creative team, with direction and choreography by Nick Winston (Bonnie & Clyde, Fame) and a new book by Steven Antin, who also wrote and directed the original film. The stage version will combine beloved songs from the film with original music written by a top-tier team including Jessie J, Todrick Hall, and Kylie Minogue’s longtime collaborator Steve Anderson.

Aguilera is also contributing original songs and overseeing the musical’s vocal arrangements – a thrilling prospect for fans eager to hear her stamp on the stage version.

Casting has yet to be officially announced, but anticipation is building around who will take on the role of Ali – an extraordinary character with powerhouse vocals, grit, and charisma. Rumors are already swirling around rising stars from both sides of the Atlantic, but one thing’s for sure: the bar has been set sky-high.

Why Burlesque Still Matters

In an age where empowerment, self-expression, and female-led storytelling are more vital than ever, Burlesque’s return feels perfectly timed. Its themes of resilience, reinvention, and the transformative power of performance continue to resonate. Aguilera’s involvement – both creatively and spiritually – ensures the stage adaptation will honour its roots while boldly embracing the future.

She’s no stranger to reinvention herself. With over two decades in the industry, Aguilera has continually broken boundaries – musically, visually, and culturally. Whether through chart-topping hits, fearless fashion, or advocacy for self-love and freedom of identity, she has carved out an indelible place in pop history. Producing Burlesque for the stage isn’t just a return to form – it’s a continuation of her legacy as a trailblazing artist who redefines what it means to be iconic.

Curtain Up on a New Era

Burlesque The Musical is now playing at the West End’s Savoy Theatre until 6 September 2025. Tickets are already in high demand, with fans eager to witness the next evolution of a glittering phenomenon. With Aguilera at the helm and a dream team behind her, Burlesque is ready to shake up the West End with feathers, fire, and fierce femininity.

Because some stories are just too fabulous to stay on screen.

In a bold and zeitgeist move, Billie Eilish enforced a completely vegan food policy at her London concert held at the O2 Arena, making it one of the venue’s first-ever fully plant-based events. The decision wasn’t just about aligning with her personal values – it was a strategic, intentional act of activism wrapped in entertainment.

Every food vendor at the show was required to offer 100% plant-based options, removing all animal products from the arena for the evening. This move came in tandem with the UK iteration of her climate-focused event series Overheated, demonstrating her commitment to environmental awareness and compassionate living. By using her massive platform not just to entertain but to influence change, Billie showed the power of artistry merged with activism.

What makes this move particularly genius is the seamless integration of ideology into fan experience. Rather than solely sharing a verbal message about veganism, Billie made it tangible. Concertgoers were exposed to delicious, sustainable food alternatives, many likely for the first time. For the uninitiated, the barrier to trying vegan food can often be psychological or based on outdated assumptions. But when a global superstar like Billie Eilish curates the experience and makes it part of the atmosphere, it normalizes plant-based choices. It transforms veganism from niche to mainstream, from optional to celebrated. This kind of immersive activism plants seeds that can grow far beyond the concert itself.

The decision is also undeniably progressive, tackling issues like climate change, animal rights, and public health all at once. Animal agriculture is one of the leading contributors to greenhouse gas emissions, deforestation, and water pollution. By choosing to host a vegan-only event, Billie directly reduced the environmental footprint of the show – imagine the carbon saved by eliminating thousands of meat-based meals in a single night. It also set a new precedent for what concerts can and should look like in an era where fans are increasingly socially and environmentally conscious. The move positions Billie not just as a pop icon, but as a cultural leader and changemaker.

She’s not alone in this endeavor. Other artists have embraced similar ethical frameworks on tour. Moby, a longtime vegan and activist, has hosted entirely vegan events and even opened vegan restaurants to further the cause. Paul McCartney famously refuses to perform at venues that don’t offer vegetarian options. Meanwhile, artists like Ariana Grande and Joaquin Phoenix (though primarily in film) use their star power to amplify messages about animal welfare and sustainability, ensuring their platforms are aligned with their ethics.

Billie Eilish’s vegan London concert wasn’t just about food – it was about demonstrating how artists can use their influence to push culture forward. In a world where celebrity activism often stops at social media posts, Billie is walking the walk – literally feeding people her values. It’s a model that can be replicated, showing that art and ethics aren’t mutually exclusive. Instead, they can reinforce each other in powerful, delicious, and world-changing ways. We’d love to see her collaborate with London-born, fellow vegan artist NEO 10Y, whose boundary-pushing music and outspoken activism would be a perfect match for Billie’s bold vision.

A new A Greener Future report reveals a sharp rise in festivals embracing sustainable practices, with fully vegan or vegetarian events doubling from 8% in 2023 to 20% in 2024, and meat-free food accounting for over half of all offerings. Since food and drink are among the top carbon contributors after audience travel, reducing animal-based products cuts emissions dramatically – food-related emissions dropped from over 25% at meat-serving festivals to under 10% at meat-free ones.

Other green initiatives include banning single-use plastics, boosting recycling rates (38%→49%), implementing reusable cup systems, and shifting toward renewable energy and battery power. Pioneering artists and festivals like Massive Attack’s 100% plant-based, battery-powered Act 1.5 event and Coldplay’s sustainability roadmap underline a growing trend: live music is increasingly prioritising planet-friendly solutions.

In the heart of Mayfair, nestled within the refined walls of Browns, London’s iconic luxury fashion store, lies a restaurant that challenges expectations with elegant audacity. 123V, the brainchild of celebrated French chef Alexis Gauthier, is a fully vegan sushi concept that redefines both the culinary experience and our assumptions about what sushi can, and should, be. This is not simply a dining destination. It’s a cultural statement, an ethical proposition, and an invitation to see food through a new lens: one that places flavour, sustainability, and wellness in beautiful, harmonious balance.

Sushi, as a concept, has long been associated with precision, minimalism, and reverence for ingredients. Traditionally centred around raw fish, it represents an ideal canvas for artistic culinary expression. Yet 123V proves, with confidence and clarity, that removing animal products does not diminish the art – it enhances it. Gauthier’s Garden Sushi menu pushes the form forward, replacing tuna with ‘VTuna’, salmon with ‘Zalmon’, and meat-based broths with clear, plant-driven umami. The result is not an imitation of the familiar, but the emergence of a new identity – one that is better for animals, the planet, and our own long-term health.

What arrives at the table is nothing short of spectacular. The Green Dynamite roll is a riot of colour and texture, marrying avocado, crunchy vegetables, and spicy notes with finesse. The Seoul 3D roll brings a subtle heat and depth, while the Sea Tacos – a particular highlight – layer creamy plant-based fillings into perfectly crisp shells, presenting a joyful collision of form and flavour.

Equally impressive are the smaller plates, which hold their own against the more elaborate sushi. The crispy tofu skewers arrive lacquered in a sticky, sweet-savoury glaze, their exterior crackling to reveal silky-soft interiors. They are deceptively simple, yet undeniably addictive – proof that when technique meets intention, even the humblest ingredients can dazzle. The nem rolls, meanwhile, offer a fragrant, deep-fried crunch, balanced with fresh herbs and dipping sauce, conjuring comfort and memory in each bite. These are not just appetisers – they’re thoughtful, crafted expressions of the kitchen’s ethos.

For those seeking variety, the new Lunch Bento is perhaps the best-kept secret in Mayfair. Served daily from noon to 4pm, it offers four pieces of sushi and a changing seasonal main course in a beautifully crafted wooden box for just £14 – a rare moment where luxury and accessibility genuinely coexist. The Bottomless Sushi option, now returned to its spiritual home in Mayfair, is a celebration of abundance: unlimited maki, nigiri, hand rolls and signature creations for £36, making it ideal for celebrations, work gatherings, or indulgent afternoons that turn into evenings.

The desserts deserve equal reverence. The 123V Tres Leches is a revelation – light, soaked, and deeply satisfying without the use of dairy. The Matcha Soft Cake brings a grassy complexity balanced by subtle sweetness, and the Chocolate Mousse is silken and rich, crafted for those who believe plant-based desserts can be as luxurious as their traditional counterparts. They are not an afterthought here; they are the final notes in a carefully orchestrated symphony.

What makes 123V remarkable is not just its execution, though it is flawless, or its concept, which is timely and intelligent. It’s the sense of openness that pervades everything. This is a restaurant for everyone: vegans, the veg-curious, committed carnivores looking to explore, or simply anyone in search of something beautiful to eat. There’s no preachiness here – only plates that speak for themselves, each one a quiet, delicious argument for change.

Dining at 123V is a reminder that we no longer need to choose between elegance and ethics, innovation and impact. In a time where how we eat is increasingly tied to who we are – and who we want to be – Gauthier’s vision offers a clear path forward: one where compassion and creativity are not in conflict but in concert.
